Preparing the Noodles:
Mix the flour, salt, and water (add the egg if using).

Let it rest for 30 minutes under a damp cloth.
Roll out the dough thinly, cut into fine strips, and sprinkle with flour to prevent sticking.

Drain and let them dry completely on a tray for a few hours.
To make them "instant," fry them in hot oil (160-170°C) for 1-2 minutes until crispy and well-dried. This step makes them storable and quick to rehydrate.
